Farmers’ Market Recipes for Vibrant Skin

One of my weekly traditions since moving to San Francisco includes a trip to the farmers’ market to buy fresh, healthy produce for the week. While a trip to the normal grocery store might result in buying packaged or pre-made foods, shopping at the farmers market, yields much fresher results. Not only will you be able to come up with more delicious creations for lunch and dinner, but your skin and hair will thank you.

Buying a variety of fresh foods gives me plenty of options to create plant-based meals full of vitamins and minerals. Not to mention, fresh fruits and veggies offer a ton of health benefits including increased energy and more vibrant hair and skin. The extra boost of vitamins and minerals help reduce puffiness under your eyes and and smooth out your complexion. 

After bringing all of my veggies home, I'm always inspired to make a salad my greens as a base. Today, it's kale and spinach. Did you know? Kale is a nutrition powerhouse containing vitamins K, A, and C, and a plethora of vitamins and minerals. Vitamin C helps with collagen production, which keeps skin looking youthful and healthy, while vitamin A helps with cell renewal. In-fact, just one cup of kale contains your daily dose of vitamin K. Time to eat up!

Mason Jar Salad

Put a new twist on “fast-food” by making a salad ahead of time in a mason jar. Layer ingredients starting with your dressing at the bottom (a squeezed lemon and olive oil make a great, natural dressing) and then layer with your veggies starting with the crunchiest ones at the bottom. Put your lettuce in the middle, and top with your favorite salad toppings (including nuts, cheese, seeds, etc.) Feel free to get creative and have fun with it! The better your food looks, the more likely you are to take it on the go.
